Method
Mix the protein soup powder with 100ml water. Leave to stand for 3 minutes. Pour the soup over the couscous and leave to stand for 5 minutes to allow the couscous to absorb the water. In the meantime, cut the courgette into half-circle slices and dry fry them on both sides. Add the olive oil, cherry tomatoes and garlic and sauté the vegetables. Stir in the soft couscous, a tablespoon of pesto and mix everything together. Garnish with fresh basil leaves, a dollop of pesto, dry roasted sunflower seeds and serve.
How to make homemade basil pesto? It’s very simple. Take a handful of basil leaves, 2 tablespoons of sunflower seeds, 2 tablespoons of olive oil and 2 tablespoons of grated parmesan and whizz everything in a processor. Use it to garnish your couscous.
