Method
Preheat the oven to 200°C. Wash the fish and pat it dry. Using a sharp knife, make three slashes on each side of the fish. Sprinkle with salt both on the inside and outside. Place 2 lime slices inside the fish and drizzle some lime juice on top. Remove the largest leaves from the leek and set them aside. Trim the leak by removing its darkest end. Cut the leek into slices and put them inside the fish. Sprinkle the fish with chilli flakes, garnish with sprigs of thyme and wrap each piece into a leek leaf. Place the fish on baking parchment, add the rest of the leek leaves and drizzle with olive oil. Wrap the fish into the parchment and bake for 15 minutes. Unwrap and place under the grill for another 10 minutes until golden.
