In a small bowl, make the coffee and leave to cool down. Cut the protein croissants into slices. To make the mixture, separate the eggs. In a bowl, beat together the egg yolks, vanilla essence and chicory syrup. Add the mascarpone and mix thoroughly. Whisk the egg whites and gently fold into the yolk and mascarpone mixture. Take 4 glasses and start layering the dessert in the following order: croissant slice dipped into coffee – mixture – croissant slice dipped into coffee – mixture. Place the glasses in the fridge and leave to rest for at least 1 hour. To serve, sprinkle with some cocoa powder.
