Ingredients
- broccoli 250 g
- egg 1
- fresh baby spinach handful (for topping)
- garlic clove 1 (for topping)
- KetoDiet protein drink 1 scoop (15g)
- oregano to taste
- parmesan 10 g + for topping
- pepper to taste
- sliced champignon mushrooms 2 (for topping)
- tomatoes 2 (for topping)
Method
Cut the broccoli into florets and whizz them in a food processor to make “rice”. Line a baking tray with baking parchment and spread the broccoli rice over it. Place in a preheated oven and bake at 180°C for 10 minutes. Once baked, mix the broccoli with the egg, protein drink and parmesan to make a dough. Season with salt and pepper. Roll out the dough and spread it with the mixture of tomatoes, garlic and oregano. Top with the mushrooms and lightly sprinkle with parmesan. Place in the oven and bake at 180°C for about 15 minutes. To serve, garnish the pizza with some baby spinach leaves.
