Chop the courgette into small pieces. In a frying pan, dry fry the pumpkin seeds. Transfer the seeds into a small bowl. Pour the oil in the pan and lightly cook the garlic. Add the courgette and cook until tender. In the meantime, cook the protein pasta as per instructions and stir it into the courgette. Pour in the egg white and season with salt. Keep stirring until the pasta is well combined with the egg white. To finish, sprinkle with the pumpkin seeds and garnish with some parsley.
