Keto Potato pancakes

Ingredients
- balsamic vinegar 1 tsp (for salad)
- celeriac 150 g
- garlic cloves 1
- ground caraway seeds to taste
- ground linseed 1 tbsp
- marjoram to taste
- mixed green leaves (rocket, Romaine lettuce, lamb’s lettuce...) 1 handful (for salad)
- oil as needed
- olive oil 1 tbsp (for salad)
- pepper to taste
- radishes 3 (for salad)
- salt to taste
- water 100 ml
Method
Grate the celeriac and mix it together with the rest of the ingredients, including the protein flatbread mix, to make a thin batter. In a frying pan, drop spoonfuls of the batter to make small pancakes and fry until golden. Serve with a vegetable and mixed leaf salad (we used lamb’s lettuce, rocket and beetroot leaves): mix the leaves and radishes together and drizzle with some dressing made of olive oil and balsamic vinegar.
