Method
Pour some olive oil in a pan, add the finely chopped onion and fry briefly. Add the mince and
season with salt and pepper. Add some basil and sauté until the meat is browned. Pour in the
wine and let it simmer. Once the wine has evaporated, add the chopped tomatoes, a splash of water and cook for another 30 minutes. Using a potato peeler or knife, slice the courgette lengthways into thin strips.
Grease a baking dish with butter and place the courgette slices on the bottom. Pour in the mince mixture, sprinkle with the cheese and pour over the egg beaten with cream. Then continue with another layer of courgettes, mince mixture and cheddar topped with the egg and cream mixture. Repeat once more and finish with cheese and cream on top.
Place the dish in a preheated oven (200°C) and bake for about 30 minutes.
Our tip: Sprinkle the courgette slices with salt and pat dry with paper towel. This will allow the
courgettes to release any excess water.
