Method
Put egg, yoghurt and birch sugar into a bowl. Mix well, ideally with hand mixer. Use another bowel to mix all dry ingredients together – vanilla flavour protein powder (you may replace it with 2 measuring spoons of cream flavour protein drink), flax flour, psyllium, baking powder, nuts, raisins and chocolate chips if you wish.
Then mix both mixtures together and leave the dough rest for a while. Make an oval shape of stollen from the dough, ideally on a baking tray lined with parchment paper. We recommend that you moisten your hands with cold water first, you will shape the stollen better since the dough is sticky. If your dough is too runny, add a little more psyllium. The dough should hold the shape.
When you are satisfied with the shape of your stollen, glaze it with whisked yolk. Put it in the oven preheated at 160 °C and bake for approx. 1 hour. “Dust” the freshly baked, still warm, stollen with birch powder sugar. Before cutting let the stollen cool down.
OUR HINT! If you’ve finished with your diet add a handful of raisins, candied fruit or a few chips of 70% cocoa dark chocolate. If you are on a diet, add grated protein bar.
