Method
Grate the cauliflower, sprinkle with salt and leave to stand. Drain the excess water. Transfer the cauliflower rice onto a tea towel and squeeze out any remaining water. Mix 1 portion of the KetoDiet protein omelette powder with 100ml water. Using a shaker or a whisk, stir thoroughly. Add the cauliflower rice, herbs and parmesan. Make individual pancakes out of the mixture and fry them in a pan until they start turning brown. Once ready, top each pancake with a slice of cheddar, allowing it to melt. Serve with fresh vegetable salad of cherry tomatoes, basil and olive oil.
