Cheddar and bacon KetoOmelette with a side salad

Ingredients
- a handful of lamb’s lettuce for the salad
- a handful of rocket for the salad
- bacon 20 g
- balsamic vinegar 1 tbsp for the dressing
- basil for dressing
- cherry tomatoes 5
- dijon mustard 1 tsp for dressing
- grated cheddar 30 g
- KetoDiet omelette 1 (bacon)
- olive oil for dressing
- olive oil 1tbsp
- pepper for dressing
- salt for the dressing
Method
Start by frying the bacon strips until crispy. Then pour 1 tablespoon of olive oil (not extra virgin) in a pan and make a bacon flavoured omelette. Once flipped over and nearly finished, sprinkle the omelette with grated cheddar and fried bacon. Season with salt, pepper and fold on both sides. Flip the omelette over so that it doesn’t open and cook until ready. In the meantime, prepare the salad. For the dressing, mix all the ingredients and leave to stand so that the flavours develop and blend together. Wash the lamb’s lettuce and rocket and cut the tomatoes in half to release their juice. Mix together, drizzle over the dressing and toss lightly.
