Whisk together the egg whites and birch sugar until stiff. Add both types of flour and nuts and mix well. Butter and flour (using spelt flour) a loaf tin and pour the mixture into it. Place in the oven and bake at 170°C until pink. Take out, tip out of the tin and allow to cool. Cut the loaf into very thin slices and place them onto a baking sheet lined with baking parchment. Put in the oven and let slowly dry at about 140°C.
