Christmas pastries without remorse. Enjoy Christmas even on a diet
Do you always worry that Christmas will put your figure at risk? Enjoy Christmas without remorse this year. We have a recipe for Christmas stollen and delicious pastries that are not time consuming and you will not need any refined sugar. Will you start baking with us?
Chocolate balls rolled in coconut. With extra protein, suitable from Step 1
Try our diet protein balls instead of traditional rum balls this year. They are easier to make and will be a surprise for your visitors. Just mix a few ingredients, roll the balls in coconut or nuts and that’s it. They are suitable from Step 1 of your KetoDiet, so you needn’t worry about your figure. Only watch out that you eat the balls instead of one of your five daily meals. For instance, as a morning or afternoon snack.
Ingredients for 1 portion:
- 15 g Dutch cocoa
- 1 portion = 2 measuring spoons or 1 bag of KetoDiet protein drink – we’ve used vanilla flavour
- 15 ml coconut oil
- 10 g almond flour
- Stevia or chicory syrup according to taste
- A little water or milk
You may double or triple the amount of ingredients if you wish!
Mix everything together, shape balls and roll them in coconut or other chopped nuts. Keep the balls in the fridge.
Diet Christmas stollen. Sugar and gluten free
Don’t be afraid of experimenting. Make an exquisite stollen that will contain only 10 g of carbohydrates and as many as 15 g of proteins in one portion. It is gluten free and you won’t add any grain of refined sugar. You may enjoy it from Step 2 of your diet plan, but we have also prepared hints for you after diet. Cut a piece of stollen for breakfast or afternoon snack and it will make your day.
Ingredients for 6 portions:
- 150 g of full fat yoghurt (ideally Greek), you may combine it with curd cheese or fresh cheese
- 4 eggs
- 6 spoonfuls of xylitol (birch sugar)
- 2 measuring spoons of new cream protein drink or 1 bag of vanilla flavour protein drink
- 80 g of flax flour – ground golden flaxseed
- 30 g of psyllium
- 50 g of chopped walnuts or almonds
- 1 baking powder
- 1 yolk for glazing
- Xylitol powder for “dusting"
Put egg, yoghurt and birch sugar into a bowl. Mix well, ideally with hand mixer. Use another bowel to mix all dry ingredients together – vanilla flavour protein powder, flax flour, psyllium, baking powder, nuts, raisins and chocolate chips if you wish. Then mix both mixtures together and leave the dough rest for a while.
Make an oval shape of stollen from the dough, ideally on a baking tray lined with parchment paper. We recommend that you moisten your hands with cold water first, you will shape the stollen better since the dough is sticky. If your dough is too runny, add a little more psyllium. The dough should hold the shape.
When you are satisfied with the shape of your stollen, glaze it with whisked yolk. Put it in the oven preheated at 160 °C and bake for approx. 1 hour. “Dust” the freshly baked, still warm, stollen with birch powder sugar. Before cutting let the stollen cool down.
OUR HINT! If you’ve finished with your diet add a handful of raisins, candied fruit or a few chips of 70% cocoa dark chocolate. If you are on a diet, add grated protein bar.
